Chicken and pea shoot pasta

Enough for 4 as a starter 2 as a main course

The idea of slicing the leeks and the chicken into really thin pieces is that it reduces the cooking time. Please don’t overcook the chicken breast as they are very lean and can dry out and end up tasting grainy.  Cook the pasta and remember to reserve some of the cooking water so you can add it to the sauce at the end if necessary. Add the pasta to the HOT sauce.  Please substitute tagliatelle with courgetti if you prefer.
