Eggplant Parmigiana

Enough for 6.

This is simply delicious and amazing as the main feature or as a side dish. Bake and eat immediately or prepare ahead, reheat if you have left overs or freeze.  Just make sure you cook the aubergines thoroughly before putting them into the oven dish.

Serve with anything from a roast chicken, steamed beans and new potatoes to cold meats and salad.
