I walked past my rhubarb plant and wondered what to do with the stalks when they are too big and fibrous to eat and this is what I decided to make. It is completely delicious. I freeze it in Tupperware containers to keep it for longer and defrost and decant into pretty bottles to serve or give away as presents.
It is delicious served with fizzy water and a sprig of mint or as a mixer for gin and vodka!
